These NEW tilting stirred cookers incorporate top technology and top functionality. This means considerable savings in time, labour and energy together with new culinary possibilities. The integrated automation of the various operating and heating phases, the optimal heat distribution, the programmable cooking functions and the exclusive stirring system, complete with special scrapers, make these cookers extremely versatile. Browning, cooking and braising meats, preparing stews, pasta and rice dishes, meat sauces, sauces, risottos, purees, vegetables, jams and other specialties are no longer a problem.
These cookers come in differing volume sizes for gas 80 / 160 / 300 litres and can also come in electric steam versions in 40 / 80 / 160 / 300 litres sizes. All the operating phases are fully automatic through the control panel located on a removal arm. The electronic timer, thermostat, temperature control and other components automatically perform the functions set by the operator ensuring perfect execution of recipes. Performs uniformal cooking as the exclusive stirring system can be programmed to choose a suitable type of stirring during cooking with three (3) different modes: continuous, alternated, and with directional reverse. The cooking vat is large and not very deep with the base being a single stainless steel piece 18mm thick. It is fitted with rotating arms fitted with removable mixing paddles and special stainless steel scrapers that reach every part of the vat to nullify sticking to the pan during the browning stage.
